For years, my client LB had struggled with digestive issues — bloating, discomfort, and an ever-shrinking list of “safe” foods. Like many people with chronic GI symptoms, she had tried everything: restrictive diets, elimination protocols, and endless rules about what she could and couldn’t eat.
After being diagnosed with SIBO, she spent years trying to fix her symptoms through dietary restriction: cutting out dairy, avoiding eggs, skipping raw vegetables, and eliminating anything that wasn’t on her “approved” list. Eating had become increasingly limited, stressful, and joyless.
Then, last summer, she went to Italy…and everything changed.
Her Body’s Surprising Response
She started our call by telling me: “I’ve never felt better in my whole life.”
And I should probably mention that she is 70 years old 😊
In Italy, she ate everything — clean, wholesome, beautiful food. The kind of food Italy does so well: fresh, local, and made with care.
She enjoyed thick, creamy yogurt from a nearby farm topped with ripe berries. Aged Parmigiano — 12 months, 24 months, even 36 months. Fresh mozzarella layered with organic tomatoes, basil, and olive oil.
Soft-boiled eggs were something that her body suddenly craved. Simple salads dressed with lemon juice and olive oil, topped with salmon or chicken. She enjoyed homemade gelato, after years of avoiding sugar.
And something extraordinary happened.
No gas. No bloating. No discomfort. Even after she returned home, her digestion stayed calm and her body remained at ease. She ate more foods than she had in years and lost five pounds without trying. More importantly, she felt free.
When the Nervous System Feels Safe
In her words: “My body said, ‘good for you’ and the fear melted away.”
Eating no longer felt like a threat; it felt like nourishment.
What changed?
It was more than her diet.
It was her state of being.
In Italy, she wasn’t following a protocol and adhering to a list of “no’s.” She was relaxed. She was present. She was surrounded with connection and beauty. Her nervous system finally felt safe, and her body responded with ease.
Healing doesn’t always come from the next elimination or supplement. Sometimes it comes when we exhale — when we soften, savor, and trust our body again.
The Gut-Brain Connection in Action
As both research and clinical experience show, our digestion is profoundly influenced by our nervous system. When we eat in a state of relaxation and pleasure, our parasympathetic (“rest and digest”) response allows our body to absorb and process food efficiently. But when we eat in fear or tension, digestion can shut down, no matter how “healthy” the food may be.
This client’s experience in Italy was a beautiful reminder that healing the gut isn’t only about what we eat, but how we eat — and who we are while doing it.

Bravo!
